Mizumi brings serious sushi and Japanese cuisine to Downtown, with a sleek modern interior that doesn't feel like typical casino dining—the open kitchen lets you watch chefs work their craft on the fish. Their omakase experience is legitimately excellent, featuring daily-sourced fish that rival anything on the Strip, and the sashimi platters offer incredible value for the quality you're getting. The ramen bowls are rich and deeply flavored, particularly the tonkotsu, and they make their own noodles fresh which you can actually taste in the texture. Locals come here regularly because it's authentic without being pretentious, and the staff knows their menu inside and out—they'll make recommendations based on what came in fresh that morning. Best move is to sit at the sushi counter around 6-7pm when it's busy enough to feel like an event but not so crowded you can't get attention from the chefs.
